Erewhon ORGANIC WHOLE GRAIN CEREAL RAISIN BRAN

Today, we make Erewhon Raisin Bran the same way - from the whole grain. In every single cereal flake there is an actual wheat berry. Not processed, reprocessed, and reshaped like other "whole grain" cereals. But whole grains the way nature intended, complete with bran and germ. They are steamed until soft, rolled into flakes, and oven-toasted for a taste that is wheatier, crispier, cracklier. What is it?

The name Erewhon (Air-wahn) comes from a nineteenth century novel by Samuel Butler wherein Erewhon was a utopia where each individual was responsible for his own health. This idea that one is ultimately responsible for one's well-being was the basis for our founders' philosophy. The name Erewhon was a "natural" choice.

Directions:
Apricot Nut Bread

1 1/2 cups Erewhon Raisin Bran
3/4 cup whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 egg
1/4 cup canola oil
1/2 cup honey
1 teaspoon vanilla extract
1 jar all natural apple apricot baby food
1 cup diced dried apricots
1/2 cup boiling water
1/3 cup chopped walnuts

Preheat oven to 350 degrees. Soak apricots in 1/2 cup boiling water for 15 minutes. Oil an 8½" x 4½" x 2¾" loaf pan. Dust with flour and set aside. Combine Erewhon Raisin Bran, flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice in a large bowl. Beat egg, oil, honey, vanilla and baby food together in a small bowl. Stir into dry ingredients, all at once, just until moistened. Stir in apricots with any unabsorbed water and walnuts.Spoon into prepared pan. Bake for 45 to 50 minutes or until a toothpick inserted into the center of the loaf comes out clean.
