Guayak� Yerba Mat� is organically grown in its native rainforest environment for leaf quality and purity. The shade from the upper canopy of towering hardwood trees above protects the leaves from direct sunlight, which can cause bitterness. After being hand-picked, the leaves are flash heated, then wood dried and aged using a collection of sustainably harvested hard woods by an "Uru" or wood specialist. This gives Guayak� its unique full bodied flavor. Next, the leaves are stored for one year in cedar wood chambers to let the mat� mellow, and further define it's character. When ready to mill and export, Guayak� chooses to mill the yerba mat� according to the traditional whole-plant approach, using a mixture of leaf, along with stem (for sweetness) and powder (for strength) to yield a smooth and powerful beverage. The 20,000 acre Guayak� Rainforest Preserve in Paraguay, home to 34 families, is preserving indigenous culture, and protecting over 330 bird and mammal species. Guayak� is a member of the Fair Trade Federation and certified Kosher.
